It’s easy to roast whole whitefish in the oven. This white, fresh fish has a mild and delicate flavour and only needs to be lightly seasoned to enjoy.
3 whole whitefish (about 500 g each)
Salt and pepper
Herbs, such as thyme or rosemary
Plenty of good olive oil
Rinse and dry the fish. Salt and pepper the cavity and skin. Peel the garlic, chop it and slice the lemon. With a sharp knife, make slits through the skin and insert the lemon slices and herbs. Place knobs of butter, the garlic and herbs inside the cavities of the fish. Place them in an oven dish or baking tray and drizzle with olive oil. Roast in a 175 °C oven for about 30 minutes. Do not overcook, otherwise the fish will dry out.
