Dutch Baby Pancake is excellent for weekend breakfast and brunches.

Dutch Baby pancakes

4 portion (blini pan/single serve grill pan)

3 eggs
2 dl whole milk
2 rkl butter (melted)
1 ½ dl all-purpose flour
2 rkl cornstarch
½ tl salt
2 rkl butter (to pan to melt)

Preheat the oven to 200˚C. Place a (5-6-inch) cast iron skillet in the oven.

While pan heats, whisk eggs in a large bowl until very light and fluffy. Add milk, flours, melted butter, salt and gently whisk until smooth.

Carefully remove hot cast iron pan from oven and place butter in the pan to melt. Pour the batter into the hot pan. Immediately return the pan to the oven and bake for 20-25 mins until the pancake has risen and become golden.

Berries, whipped cream, icing sugar

Smoked salmon, crème fraiche, avocado
