This sweetly spiced bread is a perfect accompaniment to any Christmas dish.

 

Christmas Bread                     

300 ml buttermilk

50 ml molasses

1 tsp aniseed

195 g plain flour

100 g flour blend (in Finland sämpyläjauho)

2 tsp baking soda

1 tsp ground bitter orange peel

½ tsp salt

 

Preheat the oven to 175 °C. In a bowl, mix together the buttermilk and molasses. Grind the aniseed with a mortar and pestle. Mix together the rest of the ingredients in another bowl, then stir into the wet. Pour the batter in a loaf tin (about 2 l) and bake on the bottom rack for 45 minutes.
